It can be a bit confussing to start and I am only just getting a bit of an idea myself. It's probably the easiest to read but it's not always that accurate so if Joss Bay has a local shop it's worth calling it for a forecast before you set out.
Don't get your swell height mixed up with wave height, you can roughly half the swell height to give you some idea of the wave size.
Wind direction is easy enough, it's telling you which way the wind is blowing and how hard. Remember Offshore GOOD, On shore BAD. You will need to know which direction best gives you surf at Joss Bay.
And period is the difference in seconds between the peak of one wave in the set and the next and you want to be looking for something above 6 really to give you anything.
Swell Stars are always a dead give away though, more shaded stars the better the surf.
